This is a great way to enjoy your leftover corned beef.

1/2 cup mayonnaise
1/2 cup sour cream
1 1/2 teaspoons coarse grained mustard
1/4 cup chopped onion
1 TBS finely chopped fresh parsley
2 cups cooked, finely chopped corned beef

Combine mayonnaise, sour cream and mustard in a medium bowl until well blended.

Stir in corned beef, onions and parsley

Serve on bread, toast or crackers.
