Cut from leaner cattle, and dry aged, these have fantastic flavor and a texture more like a sirloin than a fatty, well marbled Delmonico. Slow the cooking temperature down when grilling or pan frying to medium – you will still get a great crust. These are also great in recipes for stir fry, pepper steak, stroganoff, shish-kebab, steak fingers, or chicken fried steak. Not recommended well-done.
